Upgrade Jackson for AWS NARs

The AWS NARs are currently bundling an old version of Jackson. According to AWS this is because they are maintaining capability with Java 6. They also state that client applications are welcome to override that version if they want to [1].

Will override to bring Jackson usage in line with the rest of the application.
