Ensure that the project can build on Mac OS with homebrew GCC

It would be nice to eventually switch away from Xcode's AppleClang, due to many missing/outdated features, but the first step to that is to make sure that we can use GCC instead, from homebrew. The original system "gcc" command is just an alias to AppleClang.
