Update README.md to reduce emphasis on Hadoop

The README.md file is displayed on the github home page https://github.com/apache/impala

Change this so that the opening line mentions “data stored in open data formats” instead of “data stored in Apache Hadoop clusters“.

Also add Iceberg as the first mentioned place where data can be stored.
