Add support of SQL Server JDBC plugin in Docker Image

The current Docker image has MySQL/PostgreSQL plugins enabled. SQL Server is missing even if the jar is available in the Docker image.

It would be great to add the JDBC driver and provide the same ability to configure using environment variables the connection to an SQL Server database
